Date in the woods? Healthy date bar recipe :)


I am constantly making snacks and eating them. Here's a delicious peanut butter chocolate bar (5 ingredients) that carried me through a weekend in the woods. High in protein, fiber and taste! Enjoy xx Kas 1/2 cup peanuts 1/2 cup almonds (or 1/2 cup almond flour) 3/4 cup coconut Blend in food processor until its crumbly (approx 10-15 seconds) Remove from bowl and set aside. 1 1/2 cups packed soft dates (pits removed) Blend in food processor until a soft ball forms (approx 10 seconds) add nut/coconut mixture back to food processor. Add 3 tablespoons cocoa. Process until everything is combined and uniform in shape. When you press a handful of mixture together it should form a ball. If not, add a few more dates and process until smooth.

Press into a 8x8 dish or a bread pan lined with wax/parchment paper. Refrigerate 30 mins. Cut into bars. You can wrap these individually or store in a container separated by wax paper. Store in refrigerator or freeze! They last at least 4 days when hidden from kids.
